Meet one of Northern California’s most esteemed Japanese chefs, Ken Tominaga, as he offers a menu that spotlights miso, a seductive ingredient central to the country’s cuisine.
Immersed in Japanese cooking since childhood, the Tokyo native opened Rohnert Park’s top-rated Hana restaurant in 1990. In 2014, he partnered with Chef Michael Mina to launch PABU in San Francisco, which offers an izakaya-style experience. His menu:
- Japanese Crudités with Spicy and Sweet Dipping Sauces
- Akadashi Soup with Nameko Mushrooms
- Miso-Glazed Black Cod with Crispy Rice and Seasonal Fall Vegetables in Asari Dashi Broth
- Panna Cotta, Coffee Jelly & Vanilla Gelato with Okinawa Syrup
To complement the menu, we’ll offer the wares of Sequoia Sake, which brews and bottles fresh sake in San Francisco. Join us for a taste of Japan! Guests can also enjoy local Jackson Family Wines with their meal.
